Two Favorite Chinese New Year Recipes

The following are our two favorite new Chinese New Year Recipes (re: February 10, 2013):

Spicy Green Beans

1 lb. fresh French green beans (the skinny ones)
1/2 Tb. oil
4 dried red chili de árbol
1/2 c. Lee Kum Kee Oyster Sauce

Snip the ends off of the green beans, if desired (we don't). Stir fry green beans and chilies in hot oil until not quite fork tender. Cover with lid and steam until the beans are the tenderness you desire. Add the oyster sauce. Mix well to completely coat the beans and serve immediately. For less heat, cut down on the number of chilies or use fresh ones without the seeds. Serves 8-10.

Beef and Broccoli 


2 lb. beef tenderloin 
4 lb. broccoli (or 3 lb. broccoli florettes)
A
2 Tb. soy sauce
4 tsp. sugar
2 tsp. soda
4 T. water
2-1/2 Tb. cornstarch
4 T oil
1 tsp. garlic powder or 4-6 cloves fresh garlic, chopped
B
1/2 c. chopped green onion
2 tsp. ginger powder 
C
1 tsp. salt
1/4 c. sugar
2-1/2 Tb. cornstarch
1/2 c. soy sauce
2 c. water 
1. Slice beef and soak with A for 30 minutes.
2. Cut broccoli into small pieces and set aside.
3. Stir fry beef in oil and drain.
4. Heat another 3 Tb. oil and stir fry with B and broccoli--broccoli should still be very firm. 
5. Add beef and C
6. Heat together until sauce thickens and serve immediately. Broccoli should be just fork tender. 
Serves 10-12
